Winery Review: Savor this Viagio (Italian for Journey) Cabernet Sauvignon to discover the splendor of Italy, where excellent foods pair with the finest wines. The intense bouquet, the body and the hints of red fruits and spices of this Cabernet Sauvignon will let you taste a truly Italian experience.

My Review: This weeks wines were Domestic v. Import. This was the import variety from Italy. After doing a little research, this was a hard wine to find. It doesn't seem to be a popular choice, which is such a shame. This was am amazing wine. I smelled cherries and pomegranate. Very alluring smells for this dark red wine. When I tasted it by itself, I tasted a wet wood or cork and it was very acidic. It instantly gave me a warm feeling all over and reminded me of fall. If that can be put into a taste other than pumpkin spice, this would be it! After 2 hours and the wine sitting on the counter, we had dinner. On the menu for tonight was medium rare rib eye steak and an asparagus, goat cheese and almond salad with a mustard vinegarette. (I feel like this may be spelled wrong) This pairing was A-M-A-Z-I-N-G!!!!! Probably the best thing I've ever had. The salad dressing was very tangy, but complemented the wine so well. It brought out all the delicious sweet fruit flavors and drown out all the acidic qualities it had earlier. I'm probably a little bias as this is my favorite wine variety, but this pairing was out of this world. I would highly recommend anyone to pair a great Italian Cab Sav with a good read meat and a tangy salad for an excellent meal. This will definitely end up on the list of things to buy again!
